Home-made granola
Serves: Makes about 6 cups.
 
Ingredients
  • 2½ cups whole rolled oats
  • 1½ cups mixed nuts, sliced (I used almonds, cashews, & pistachios)
  • ¼ cup mixed seeds (I used pumpkin, sunflower, chia & sesame seeds
  • ¼ cup freshly grated or dessicated coconut
  • 1 Tbsp coconut sugar (optional
  • ¼ tsp ground cinnamon
  • ¼ tsp sea salt
  • ¼ cup oil (I used coconut & olive oil)
  • ¼ cup sweetener (maple syrup, honey or agave)
  • ½ cup dried sultanas or cranberries
Instructions
  1. Preheat oven to 160°C.
  2. In a large bowl, mix the oats, nuts and other dry ingredients.
  3. Combine oil and sweetener separately in a cup.
  4. Pour wet ingredients into dry and mix thoroughly until its moist.
  5. Spread out on a large baking tray lined with parchment paper and bake for 30 minutes, stirring every 10 minutes.
  6. Remove from oven, add the dried fruit and mix.
  7. Let cool completely and store in airtight container.
