Tofu & herb croquettes with spicy tomato salsa

Ingredients
- 300g firm tofu, washed and drained
- ½ onion, finely diced
- ½ cup coriander leaves, finely diced
- 1 red chilli, minced
- 1 cup cheddar or mozarella cheese, grated
- Salt and pepper to taste
- 1 tsp paprika
- 2-3 cups breadcrumbs
- Vegetable oil for pan-frying
- Salsa:
- 1 Tbsp olive oil
- ½ onion, finely diced
- 2 cloves garlic, minced
- 1 can whole plum tomatoes
- 1 tsp brown sugar
- ½ tsp chilli flakes
- 1 tsp tomato puree
- ½ tsp mustard
- Salt to taste
Instructions
- Squeeze the tofu between paper towels until very dry. Transfer to large bowl and mash until crumbly.
- Add onion, coriander, red chilli and grated cheese. Mix well.
- Season with salt, pepper and paprika.
- Refrigerate the mixture for at least half an hour and for up to 2 hours to allow it to become firm.
- Gradually add breadcrumbs and keep mixing until mixture is firm enough to be able to shape into cutlets. (Note: You can also add some olive oil to help bind).
- Coat each cutlet the remaining breadcrumbs.
- For the salsa: In a saucepan, sauté the onion and garlic till soft and golden. Add tomatoes and all the other ingredients, except mustard. Smash the tomatoes to release pulp and juices. Cover and simmer on low heat for approximately 10 minutes until reduced, stirring occasionally. Take off heat, add mustard and mix.
- Pan-fry the tofu cutlets until golden brown on both sides. Serve with a spoonful of salsa on top.

This sounds like a fabulous recipe, though I’m wondering if I can replace the bread crumbs with oats, would that alter the taste too much?
