Raw Apricot-Nut-Chocolate Balls

Wanted some healthy snacks for a long flight so I decided to try something new and am very pleased with the outcome. These little balls of goodness are super-easy to make, low-sugar and packed with nutrients …so I just had to share!


Raw Apricot-Nut-Chocolate Balls

Ingredients
  • 1 cup raw cashews/almonds/brazil nuts (I used a combo of all 3!)
  • 1 cup dried, unsweetened apricots
  • 1 tsp sesame seeds
  • 1 Tbsp oats, toasted with a sprinkling of brown sugar
  • 1 Tbsp grated dark chocolate
  • 1-2 tsp honey
  • 1-2 tsp extra-virgin coconut oil
  • ½ tsp lime zest
  • Pinch of sea salt
  • 2 Tbsp raw cacao
Instructions
  1. Soak the nuts for at least 6 hours or overnight and the apricots for half hour.Drain and place in a food processor with all the other ingredients, except raw cacao.Pulse until blended, mixture should resemble a thick dough.
  2. Taste and adjust sweetness.
  3. Roll into little balls of your preferred size and dust with raw cacao. Refrigerate.
  4. Enjoy your healthy snack!
